You know what? I forgot to write what I intended to write on the Spegetti Sauce thread. I wanted to say, your mothers cooking reminds me of my mothers cooking. I love the way you write. Now I know, since your mother is still living you have to be careful what you say and how you say it. I have a little more freedom. My mom is somewhat dead. Sometimes I can feel her looking over my shoulder. Man, will I hear it when I cross over. S.B. says everyone over there is happy. I hope mama is delirious. She had a gift for going on and on. She had green eyes that would turn yellow. Sometimes I can still see those eyes. She had red hair and a temper befitting an Irish woman. Her name was Iris.

Prune Tart
1 stk. butter
1 c. packed light brown sugar
1 1/2 c. chopped prunes
1 egg
1 8oz. pk. cream cheese
1 c. all-purpose flour
1/2 t. baking soda
1/4 t. salt
1 1/2 t. pumpkin-pie spice
1 c. coaursly chopped walnuts
Preheat oven to 325* Melt 1/2 stick butter in cake pan. Mix 1/2 c. brown sugar into butter and layer prunes over mixture. in a bowl beat remaing butter, sugar, and egg. beat softened cream cheese in mixture untill blended. in another bowl mix together flour, baking sooda, salt and spice and walnuts. stir mixture into cream mixture until just combined. Spread batter over plums, bake about 50 minutes. Cool in pan 5 minutes. invert onto a serving plate. Serve warm with ic-ecream.
