1 cup sugar
3 teaspoons ground mustard
1 teaspoon salt
2/3 cup rice vinegar
1/4 cup chopped white

Honey Dressing

This is great served on fruit salads.


1/4 cup vinegar
1 cup mayonnaise
1 teaspoon prepared mustard
1 teaspoon granulated sugar
1 teaspoon minced onion
1/2 cup orange blossom honey
1/4 teaspoon minced parsley
Salt and pepper
1/2 cup vegetable oil


Mix vinegar, mayonnaise and mustard until smooth. Add sugar, onion, honey and parsley and season to taste with salt and pepper. Slowly beat in oil until well blended.


Makes 2 cups.

Raspberry-Walnut Dressing

2 tablespoons walnut oil
2 teaspoons raspberry vinegar
2 teaspoons Mexican lime juice
1/4 teaspoon crushed caribe chile


Whisk all ingredients in a small bowl until thickened.


Serve over fruit or fruit salad. It is also delicious over

hunk 'o, hunk 'o burnin' heartburn!

Spinach and Pear Salad with Dijon Mustard Vinaigrette
(makes 4 servings)





Ingredients:
Nutrition Facts for Spinach and Pear Salad with Dijon Mustard Vinaigrette (text version below directions)











small bullet


2 tablespoons water



small bullet



1 1/2 tablespoons red wine vinegar



small bullet




1 tablespoon olive oil



small bullet





1 tablespoon honey



small bullet






2 teaspoons Dijon mustard



small bullet







1/4 teaspoon freshly ground black pepper



small bullet







2 pears (Bosc or Anjou), cored and sliced lengthwise



small bullet







8 cups torn fresh spinach



small bullet

1/4 cup red onion, thinly sliced



Directions:











1.

In a small bowl, whisk together the water, vinegar, olive oil, honey, Dijon mustard, and black pepper.



2.

In large bowl, add the pear slices and 2 tablespoons of the vinaigrette and toss to coat.



3.

Add remaining dressing, spinach and onion and toss to coat

Spinach and Pear Salad

From Cooking Light (October 2001). I love pears, and they are wonderful in salads. Some feta and/or some nuts (pecans, walnuts) would also be good in this.
