A few simple guidelines can help make your next wine and cheese party a success. Cabernet and Zinfandel go well with mellow aged cheese like Gouda or Asiago. Try serving Chardonnay or Champagne with rich varieties like Brie or Camembert. Sauvignon Blanc compliments the flavor of mild, un-aged goat cheese or fresh Mozzarella. Strong blue cheeses (Stilton or Gorgonzola) are perfect with a fine port.
