Hey! I'm in the middle of making this recipe, and it says to

"whip eggs until stiff, then fold them into the batter"

what's that supposed to mean?!?!?!

It means to whip the egg whites (like whipping cream) till they form stiff peaks when you pick up the beaters out of the bowl. then the Fold into the mixture means to carefully stir in the egg whites into the mixture.

And here's an additional tip about folding egg whites into your batter.


Add about 1/3 to 1/2 of the egg whites, first. Using a spatula, very gently scrape the batter along the sides of the bowl and turn (fold) it over the egg whites. Keep doing this until you hardly see the whites. This helps get the whites incorporated more easily into the batter. Then, add the remaining egg whites and repeat.


You want to avoid "crushing" the egg whites and losing the air that you've just whipped into them.
