LOL well I reheat the left over Eggplant Parmesan or Chicken Parmesan get some nice rolls, I like to use something like hoagie rolls and put the Eggplant parmesan on. Then if its a bit dried I add a little sauce to the top, some cheese and put it under the broiler to melt the cheese and toast it a bit. Very yummy!

I love it. Zucchini can be treated the same way, and it
has less of its own flavor which can be a plus if someone
doesnt like the stronger flavor of the eggplant. Not sure
if I've had chicken or veal prepared in that way.
There are different ways of handling the eggplant; some
fry it, some salt it, some bake it. I even saw a barbecued
one. I'll post 3 versions.
