I've never had this specialty, but I would imagine you could do it with tenderized round steak if you used a meat tenderizer or marinade to soften it up after you pound it thin.

Does your grocer have a tenderizing machine behind his meat counter? We always have our tenderloins and other types of meat run through the tenderizer. He does it for free.
