How to keep potatoes from spoiling ?

I wondered if any one has a way to keep potatoes from spoiling? I usually buy a 5 lb. sack and have a bin that keeps potatoes and onions. It's one of those standing wood ones.


Even tho I use them up pretty quickly, there are always a few that rot and boy do they stink when they do.


My grandma use to put an apple in her potato bin to keep them from sprouting eyes. I do the same but sometimes they still do.


Roni, since you have been in the restaurant business so long, what did they do to keep large quantities of potatoes from spoiling? I was told not to refrigerate them. Any ideas? Thanks, Lu

If you use them fairly quickly and they are spoiling, I wonder how fresh your store is getting them.

There used to be a recipe on the Good Season's Salad Dressing packet that was AWESOME for potatoes.
