It's that time of year, when everyone has more zucchini than

hunk 'o, hunk 'o burnin' heartburn!

For smaller ones, we slice them the long way
and marinate in lemon juice and soy sauce. Then
we grill until tender. Yellow crookneck or
straightneck squash are good this way too.

Last night we were too busy to grill, so I baked
the marinated squash. It was just as good and
way less trouble.

I've made a zucchini-carrot bread that was really
good also.

My neighbor usually shares zucchini with me every year and I always take every bit of it for zucchini bread. I'll freeze the loaves and enjoy them all winter.


I have been known to put some in a foil pack on the grill, however.

I have only used it three ways, but want to try more because I love zucchini and yellow squash.

Here at the campground the managers wife makes zucchini bread with lots of cinnamon and walnuts oh my is that stuff good.


But I have found that if I Google an ingredient I get tons and tons of recipes. Probably more than you wanted....lol


Even though zucchini does well every year I think this is one of those years when it did better than ever.


We have been eating berries this year. Most years those little containers that you get in the store were over $3 this year more like $1.50 or less.....YUMMMMM......
