I just grate the cheese on the chips and put them under the broiler or in the microwave. I use cheddar and sometimes combine it with monterey jack or mozzarella.

I only know of ONE recipe for cheese sauce that stays soft cold.
Try this blender concoction as a salad dressing or taco sauce.
