I just grate the cheese on the chips and put them under the broiler or in the microwave. I use cheddarand sometimes combine it with monterey jack or mozzarella.
Here's a recipe you might like. For the kids youwill probably want to take out the peppers and hotsauce.
I only know of ONE recipe for cheese sauce that stays soft cold.
