So, I've tried velveeda and american...it's okay when it's hot, but once it cools a bit it gets really thick agan.

I just grate the cheese on the chips and put them
under the broiler or in the microwave. I use cheddar
and sometimes combine it with monterey jack or
mozzarella.
Here's a recipe you might like. For the kids you
will probably want to take out the peppers and hot
sauce.

I only know of ONE recipe for cheese sauce that stays soft cold.
Try this blender concoction as a salad dressing or taco sauce.
I actually just finished making a half recipe of the Pancho's cheese dip/sauce.
