Tropical Grilled Chicken

• 1/2 cup Minute Maid® 100% Lemon Juice
• 1/4 cup undiluted pineapple juice concentrate, thawed
• 1/3 cup honey
• 4 boneless, skinless chicken breasts (about 1 1/2 lbs.)
• 2 teaspoons powdered Jamaican Jerk Seasoning Blend
• 4 (3/4-inch thick) fresh pineapple slices, peeled and cored
• Sea salt and freshly ground pepper to taste

Stir together the Lemon Juice, pineapple juice concentrate and honey in a small bowl.

Set aside 1/4 cup and simmer the remaining glaze for 5 minutes. Meanwhile, rinse chicken and pat dry;pound slightly if very thick. Sprinkle on both sides with jerk seasoning and season lightly with salt and pepper.

Place on a lightly oiled grill and cook for about 10 to 15 minutes over medium coals, turning and basting with reserved
1/4 cup pineapple-lemon glaze occasionally. Grill pineapple slices for about 2 minutes on each side, just long enough to
lightly char. Place chicken and pineapple on a serving platter and dizzle with remaining glaze.

Makes 4 servings.
Recipe Tip: Let chicken cook on both sides before brushing with fruit glaze.
