Black Beans

Can someone remind how to quick soak these? I've been buying them canned for so long that I don't remember. I can't seem to find anything in my books either. I read online to let them sit for an hour after a boil, which I tried, but they are still pretty hard.

I haven't soaked black beans but I soaked white beans. I just put them in a BIG bowl and covered them in cold water (several inches over the top of the beans to allow room for expansion) and then left them over night. Worked fine. Good luck - I hoped they turned out well.

I needed a quick soak for a recipe I was making in the afternoon and I ended up letting them boil for 10 minutes, soak for an hour, and then simmer for an hour ~ it was that simmering for an hour that was the clincher.
