I am growing some basil and trying to keep it clipped and from going to seed. I was hoping to find some quick and easy recipes to use fresh basil. I have been using it with cherry tomatoes and a bit of olive oil and vinegar but wondered what other ideas people had.

I grow basil too, and love it in so many dishes. Add to tomato soup, spaghetti sauce and my favorite: carpaccio!!! Take paper thin slices of beef (raw), basil, capers and thinly sliced fresh parmesan cheese: arrange on a plate. Pour a mixture of freshly squeezed lemon juice and extra virgin olive olive over the lot and enjoy with some crusty ciabatta bread! Heaven!!!

Oh, your poor little plants. Good luck with them. There are so many of you with basil plants! lol

Hmmm interesting. I bet fondue beef would work well for that. For those people that don't like raw beef I wonder if something like prosciutto would work....
