Blueberry muffins

I'm looking for a delicious blueberry muffin recipe. Full of flavor and very hearty!!

Blueberry Muffins

4 c. all purpose-flour

4 t. baking soda

1/2 t. salt

1 c. butter or margarine (softened)

2 c. sugar

4 eggs

1 c. milk

2 t. vanilla

2 c. frozen blueberries


2 T. sugar

1/2 t. nutmeg

Preheat oven to 350*. Combine flour, baking powder, and salt.

In separate bowl, cream butter and sugar. Add eggs, milk, and

vanilla to butter mixture; mix well. Stir butter mixture into

dry ingredients just until moistened. Fold in berries. Fill

cups 2/3 full. Mix topping and sprinkle over muffins. Bake 20-

25 minutes. Cool 10 minutes before removing from pan.

Here is my basic muffin recipe. So sweet and moist and full of fiber, calcium and no fat. You can add a cup of fresh blueberries, or drained canned or frozen:


2 Cups white whole wheat flour

½ cup brown sugar

1 Tablespoon baking powder

½ teaspoon salt

¾ cup no fat cottage cheese, blended

2 egg whites, beaten

1/3 cup unsweetened applesauce

1 teaspoon cinnamon

½ teaspoon nutmeg

1 teaspoon vanilla

¼ cup water

Preheat oven to 400F degrees. Stir dry ingredients together in a large bowl. In a medium bowl stir

together wet ingredients w/spices and vanilla. Mix wet into dry until moistened - don’t overstir.

In a prepared muffin tin Spoon in batter about ¾ full. Bake for about 15 – 20 minutes until golden

Brown. Makes 12 muffins.
