I DID my New Recipe Challenge!!....

Well, it wasn't anything earth-shattering.....I saw this recipe on the About.com Busy Cooks site and thought I would try it. It's called "Mexican Meatloaf", but honestly, it wasn't very "Mexican" to me. The reason I tried it was because it has a can of refried beans in it and I thought that was unusual. Now, It WAS good - - very good, but it is not spicy. I might make it again and add some chopped chilies and more chili powder and Maybe top with a salsa......DOn't get me wrong, it was good and moist and my hub liked it. Served with Spanish rice. ALSO, I shaped mine using those little 2x5 aluminum loaf pans....I got 5 loafs and shortened the cooking time to 30 minutes. (we were in a hurry!(lol))
