Tracy - - thank you for bringing up wanting a Mexican rice recipe to make at home. I just may have found a site that Could be our answer. I did a google search and stumbled upon a site called Recipe Goldmine..based in the great Arizona Sonoran Desert. Anyhow, they have TONS of recipes - - from restaurants, international cuisines, why, I checked out Brownies and there must be 100 recipes!
I'm going to post 3 of the Mexican Rice recipes I found (there are even more) and maybe one of these might work for you. Here is the web site address if you would like to see the site for yourself sometime....

This is amazing....I did a search on google yesterday and came up with the same site.
I agree...it is one of THE BEST places for recipes, especially uncommon recipes. I have already spent hours looking up recipes.
I'm hot and heavy into the end of season preserving and found this source to be priceless.
