I have to work all day today so it is hubbys turn to cook, it will be leftovers tonight. We had a great pot roast with potatoes, carrots, onions and mushrooms left, so he will just pop it in the microwave, fix a salad or hot bread and wala, that's dinner.

Tracy, I usually use the fresh white cap mushrooms and if the are really large I cut them in half but if they are small ones I leave them whole and put them in the roast about 1/2 hour before the roast is done, I don't like them over cooked, they are so good. Depending on your oven you can leave them longer if you like. I also have a really good mushroom rice side dish, if you are interested I can post it for you, it uses can muchrooms and french onion soup, or you can saute fresh mushrooms and add them instead of can ones. I really like mushrooms, use them a lot.

Oh, I like mushrooms now....I didn't at first tho as my first "experience" was that bit of mushroom in mushroom soup and as a kid they were ICKy..(lol)


My Husband's Dad used to sautee them and put them on steak and THAT was delicious!
