I'm going to try Barb's Mushroom Rice this evening.
I'm getting some white mushrooms (button) and I'll sautee them for the rice.
To go with, I've got a couple beef fillets that my hub will fix (I'm lousy fixing those as I always Overcook them), and also will do some of Tracy's Broccoli - - garlic and a dab of butter......yummmmm....
We'll be eating well tonight!!

For some reason or another, I Never got into Tomato Soup...hub will have his own bowl now and then, but to me, it tastes weird!(lol)
BUT, the dumpling part of that dinner....well, I'll be over soon!(vbg) And I'll take that grilled cheese too!

TOo funny!!
I tried something new last night. What hubby calls a "creation." (meaning I have no clue what I am making until it is served! LOL) At the Farmer's Market the other day, I bought some ground lamb. Needed to do something with that.
I ended up browning the lamb, then combining it with some fresh chopped spinach, red onion, garlic, thyme and parmesan cheese. Once it cooled a little, I rolled it in phyllo dough and put them in the oven to bake. To serve, I gave little bowls of Ceasar dressing for dipping.
Wasn't sure how the kids would take to it, but they both had second helpings, and told me I can make it again ANY time! lol (it did turn out very good, and I really enjoyed the lamb...it was my first taste of it)
