Today is my hubby's birthday and we are all going out to an Italian restaurant in Little Rock.

Tuesday's dinner is very thin porkchops, rolled in a flour mixture and quick fried, Herb and butter rice and peas and sliced tomatoes from our garden.

Italian sounds good right now! But, we'll probably have left overs...tomato soup, dumplings, maybe grilled cheese again. Ho hum...I have to go to the eye doctor after work, so there won't be much time for cooking tonight.

I only tried growing my own once and they just got destroyed by bugs and birds.

Dinner tonight .... gonna try my hand at Tuna cakes with chipotle mayo sauce and basmati rice. Sounds good to me, just hope it turns out as good!!

I HATE HATE HATE that test too! But, I'm on my last pair of contacts and my prescription is already a year overdue! OOPS!

Maybe I'll have left over ribs??? Can't decide - all I know is it will be left over whatever it is.

I've had both brown and white Basmati rices from a local health food store (they serve it in bins so you can weigh and buy as much or little as you want). I like both, but I much prefer the white....much sweeter and fuller.

As for the "thorny" part, with brown rices, parts of the outer shell or husk aren't fully removed, which can make them hard and thorny at times. Thorough washing/rinsing normally takes care of that, but that's why brown rices can be tricky. I don't mind the washing, tho......it assures me that everything's clean, especially since where I buy my rice, I don't know whose hands have been in those bins!! (plus, when rinsing the white basmati, it just feels so soft and silky - I love it! lol)

I don't make the mayo itself, but I do love to flavor it!!! (there is a Chipotle GourMayo that is in stores, and it's pretty good.) I just realized that I don't have any chipotle pepper, so I will have to improvise and probably end up using Old Bay seasoning since it is a seafood dish. Will let you know how it turns out!!
