Today is so pretty, I just want to be outside....I have a bag of already cooked ground beef crumbles in the freezer, and I think I'm going to toss those into my crock pot with some beans and tomatoes and peppers and onions and spices and do a crock chili.

Around here, Sunday is race day. Yes, we are big NASCAR fans! So, our food of choice is hot wings. We use Frank's Red Hot sauce, buy frozen wings, then fry and sauce them up ourselves. Yummy!!!!! We also sometimes cut up celery and carrots and dip them in Ranch. Race starts soon, and I can't wait!!!!

Hi All,

Today for dinner, I tried something different.

I used extra-lean ground beef, onions, frozen veggies and a can of Campbell's cheddar soup. When everything was cooked I placed it in a pie plate and added Biscquick on top and cooked again in the oven for 30 mins. It was good and it was a complete meal.

That was our Sunday dinner.

What I planned and what actually happened for Sunday dinner were two different things.

Usually it is a nice big family (and friends) dinner, not too late. DD who is living here with her fiance till their wedding was invited to an old school friends about 4 with her fiance to let him meet some people in town. They were to be back at about 6 so I thought ok, fine 7-7.30 dinner and lit the bbq (ok so it is gas, but you know what I mean). I had just put a really big piece of beef in there and was just finishing putting a potato bake together when the phone went. He was having such a good time that they were going to stay on. YOu should have seen me sprint out to that bbq. I mean the idea of a 4+lb piece of beef that everyone likes medium rare and not for sandwiches the next day, and only 3 of us did not go together. LOL. The original 6 had halved so now I have it for during the week. Luckily I did have enough left over ribs chops and sausages from the bbq the night before so I just steamed a pile of veggies and that was DH dinner. I got a phone call and talked for about an hour and a bit and when I came out he had gone to bed and DS went out. LOL. Not exactly the night I had planned!
