Good question. I'm not sure have several options as I have to empty my fridge by the weekend to move it. I was thinking quiche or something with puff pastry but it's warm so maybe I will wait another hour to hear who is in or out for dinner. I do have the potatobake in the fridge from last night untouched, and cauliflower for DH. I got bags of fresh green beans and am thinking that maybe I should throw that beef back in the bbq, lol but if they all go out then it will be soup. Decisions decisions!

Tonight is DD's ballet night, so I usually do something really easy on Monday's.

I have over $50 worth of left over Chinese in my fridge so I'm guessing we'll be eating that for quite a while! LOL!! Plus I also have to clean out my fridge this week - we are getting a new one (hopefully it will come early next week) and we are moving this one to the laundry room.

I usually like to have something easy on Monday...even tho I'm not working anymore, Mondays still "feel" like Mondays...(lol)


I made some chili yesterday so that will be even better today....with a bit of cheese and some jalapenos and diced onion on top!

I love homemade chili! It really hits the spot on a cool fall day! Though we are supposed to hit the high 70's today! WOO HOO!

Yes, we are getting the fridge with the bottom drawer freezer. DH is worried it will break easily, but I told him with 2 freezers it should not be over packed so it should be fine. Plus Sears is usually pretty good about servicing their products, so I'm not concerned about that. If you think about it, anything will break if you are rough with it.

Mom said she wanted to go buy it tonight so we can have it ordered and over with, which is fine with me. So maybe we'll go out to dinner tonight! LOL!! I love going out to dinner! Of course, knowing me that is just more white styrofoam containers to put in my fridge! LOL!!

Tonight was a Scout night for us (as tomorrow will be, as well!), so I made quick Pecan-crusted chicken tenders, and served them with potato chips! lol Very yummy, especially with the maple-barbeque sauce that goes with the chicken!
