Okay, I am responsible for making a dish for Christmas Eve. Mom volunteered me to make veggie lasagna this year and I will, but I ALWAYS have to make the veggie lasagna for everything and I'm sick of it! I know everyone likes it and I'm glad they do, but I also want to do something else. So Mom said if I wanted to make anything else to feel free (less for her to cook, which I understand after how many years of cooking for holidays it could get a little old). Anyways, does anyone have any good ideas? My parents have a huge party on Christmas Eve for about 30-50 people. My aunt brings the rigatoni and fish, mom makes a roast, I make the veggie lasagna but I want to add something else this year. Any ideas?

Other people bring the sides and appetizers - usually a cold veggie pizza, shrimp, cheese/crackers, little hot dogs, bacon and water chestnuts for the appetizers. Spinach casserole, corn, carrots, baked potatoes, corn souffle, sweet potato casserole, baked sweet potatoes for the sides.

As you can see we probably don't need another main dish, but why not?! LOL!

I'm not so sure how this would go with the other dishes, , but, , I used to always do Xmas Eve back in St.Louis and what everybody LOVED was my chili dinner....I would fix a couple different Kinds of chili and have bowls of different toppings like onions, cheese, jalapenos, sour cream....then I had tons of crackers and cheeses.

I was going to make the veggie lasagna too, but wanted to make somethign else as well. I'll have to see who is making desserts and what they plan to make.

My parents Christmas Eve dinner usually consists of two main things (and the other stuff varies year to year).... Chicken Cordon Blue, and baked corn. My two absolute favs!!!!

I've even seen the chicken done up before in appetizer size portions in the freezer section. And the baked corn is a great dish as a side and even on its own (it kind of sweet, so it's a great treat! lol)
