I have some of those already marinated chicken breasts that cost a fortune when not on sale (lol)....I'm just going to put those in a pan and cook up and I have some of that low-fat mac & cheese left that we'll eat. . . . . . Next time I will add more of the milk to make it juicier. . . . I would love the Oprah Recipe mac/cheese but I love desserts more so gotta save some calories and fat somewhere!(lol) And broccoli....with garlic and a teeny dab of butter.


THEN, HOPEFULLY, since I'm eating fairly decent, and going for a walk and workout, I'll make that Pumpkin Crunch thing again since I didn't get to it yesterday. . . I LOVE that stuff!(lol)

Chicken marinated in a citrus marinade, rice pilaf (just the frozen kind) and a side salad. I'm sending some to my parents. My dad had to have surgery on his shoulder today (bone spur) so I'm sure she is tired from taking him to the surgery center by 6 AM today and I don't think my dad will be up for much of anything later.

I'm going to try the Caesar pork chops from below and will make some stuffing to go with it. And either some salad or frozen veggies depends on what I find when I get home.

P.S. The taco casserole I tried last night came out really good. I'll post the recipe below for anyone interested.

I would love to have your taco cassarole receipe, dh is out quail hunting again until Friday so it will be Lean Cusine or Healthy Choice for me tonight, just me and the furbabies at home.

You are a sweetie fixing some dinner for them.....those early appointments are rough.
