I have tons of recipes in my head that are so good and I would love to share with everyone, but I don't measure things so I can't tell you how much of each ingredient to put in. I'm trying to find recipes for some of the things, but can't seem to find them the way I make them (lol)!

Anyways, just curious if you all stick to the letter of the recipe or if you go off on your own?

In general, if I'm *baking*, I DO use the exact measurements at Least until I've tried it once.

In cooking, if I think 1 tablespoon of something is more than I'd like, I just put in what "I" think would work for "me".

I tend to do rough guesstimates on most things. Something I picked up from my grandmother.

i have the same problem. i don;t measure anything i just eye ball it. I have tons of recipes but its measurements are always different everytime i make them. And if i'm following a recipe i also eye ball it or subtitute things to what i think would be easier or better and after that i just pray it comes out good enough to eat.lol.

Mentioning Rachel Ray's way of measuring reminded me of my fav part of her cookbook - "Measuring Rachel's Way"

HANDFUL = about 3 tablespoons

PALMFUL = about 2 tablespoons

HALF A PALMFUL = you do the math!

A PINCH = about 1/4 teaspoon

A FEW GOOD PINCHES = about 1 teaspoon

ONCE AROUND THE PAN = about 1 tablespoon of liquid

TWICE AROUND THE PAN = more math: about 2 tablespoons, 3 or 4 would be 1/4 cup

I have to measure when its a new recipe but if its something I've made before I wing it. Funny you brought this up because I just made a sweet potato casserole for the first time ever and the recipe came from my SIL's mom and she doesnt measure so it was a real puzzle trying to figure out her recipe but it came out yummy if not exactly how i remember it. (plus i've never bought a sweet potato before so i bought both yellow and orange ones and the orange ones - yams - were tastier than the light colored sweet potatoes)
