I make chocolate covered strawberries all the time. My DH and I love them and they also make a very impressive company treat.
A few tips - 1)I use a real good chocolate it makes a big difference in the taste.2) I do not care for a waxy tasting chocolate so I do not put in any wax or oil into the chocolate.3) You need to be sure your strawberries are completely dry before you start to dip them even one tiny drop of water can ruin your chocolate. I wash the strawberries and let them dry on paper towels at least one hour before I start dipping them.
4)I have melted the chocolate in the microw for small batches and usually use a double boiler method if I am making a big batch. Just need to be sue you don't get any water into the chocolate if you use a double boiler.
The hardest part about making these is waiting for them to be ready to eat. You will find the longer you let them set the jucier they will be. Good luck and enjoy!
