One thing I used to do when I was on a waffle making kick would be to buy those 99ยข muffin mixes and use them for waffles. They'd probably make a pretty good pancake, too.
My bil makes the world's best pancakes. He learned from his mom, of course, but honestly, his are just a little bit better than hers! I don't know his exact ingredients, but it looks like a pretty basic recipe, but I think he must put in a little extra sugar, cause they are sweeter, he uses melted butter, and adds cinnamon. Oh, and nothing is measured, so I can't replicate it for the life of me!
At Christmas, my mom tried out a recipe for gingerbread waffles with homemade strawberry syrup. It was freakin AMAZING! I don't have a waffle iron, so I modified my Betty Crockery pancake recipe by adding cinnamon, nutmeg, and ginger. I didn't measure though. I just poured some in. Anyway, the pancakes were fantabulous!! But then dh later informed me that he doesn't like ginger. :( oh well..
I just make plain (not from a box mix) most of the time.
I have a pancake recipe from the Fanny Farmer cookbook that I love:
1 1/2 cups milk
1/4 cup oil
2 eggs
2 cups flour
4 tsp baking powder
1/4 cup sugar
1 tsp salt
1 dozen 1/4 cup pancakes
It makes a really nice, light, fluffy pancake with no effort at all, which is great.
