Yes, we celebrate Easter. We are heading to my brother's for brunch and usually have ham. I look forward to my sil's stuffed artichokes! Yes, I color eggs with both the kids, but I am the only one who will eat them hard boiled. I remember hunting for eggs in the back yard as a child. DD looks forward to finding her basket on Sunday morning (though I did just come clean that I was the Easter bunny when she asked last night).
I should try stuffing artichokes, I watched Lidia doing it last Saturday. I get lazy though, I just boil them and dip the leaves and heart into garlic-olive oil.
Levi is the only one of my 3 who likes hard boiled eggs. Caleb's first Easter he was about 7 or 8 months old & we had eaten a big lamb meal at my mom's around noon. We went out doing some running around after that & got home about 6 or so. No meal plan, so I decided to just do egg salad sandwiches. That baby couldn't get enough, he loved them & had egg salad smeared everywhere...he hasn't eaten a hard boiled egg since!! He will eat my potato salad, but complains if there is too much egg. I love having a few hard boiled eggs ready in the fridge, for snacking or adding to salad or whatever.

I do remember you saying that Caleb didn't like eggs and why, kids who too much of anything can become sick of it. :heart:
Elijah is very sensitive to smells & I think that is why he doesn't like hb eggs, Caleb is just more of a picky eater, in general. He has gotten much more adventurous in the last few years, but is still less willing to try new things. He is finding out that when he branches out & tries new things, he often likes them.
We only dyed 10 eggs tonight. Lije was against the whole egg dying thing because if we dye them someone will have to eat them & he doesn't want any part of that!! Levi, DH & I will be more then happy to eat the eggs, so no worries there. I love having them on hand, especially now that I am trying to get back on track with WW, a great addition to a salad, or just a protein filled snack. DH loves them on a cheese & cracker plate along with some pickles.

My husband will eat anything with boiled eggs, but not my kids.
