Zucchini Bread

This recipe makes 2 loaves.  It keeps well and can be frozen.

3 1/4 cups flour

1 tsp salt

1 tsp ground nutmeg

2 tsps baking soda

1 tsp cinnamon

3 cups sugar

1 cup vegetable oil

4 eggs beaten

2/3 cup water

2 cups grated zucchini

1 tsp lemon juice

1 cup chopped nuts (optional)

Preheat oven to 350.  Mix dry ingredients except nuts in a large bowl.  In another bowl mix wet ingredients and zucchini; fold in dry and add nuts.  Pour into greased loaf pans and bake about 1 hour or until toothpick comes out clean.

This is a new one on me. Lately I have been on a banana bread kick, so this would make a nice change. I just need to shop around for zucchini that don't cost an arm and a leg.

I rather have zucchini bread than banana bread! I have zucchini from MIL's garden that I plan to grate and freeze for the winter to use for zucchini breads. My zucchini isn't ready yet but she has plenty!

Lucky you. I am waiting for some bananas to ripen to make banana bread. Cut one yesterday thinking they were almost overripe, but no way still really hard.

I just used up some over ripe bananas last night, made banana muffins.

GD is now banned from any form of cake or bread that can be crumbled....yesterday did a good job on it and we were NOT making cake pops. You should have seen the floor. Yum. Had to vacuum and mop and there is still some there.
