Great recipe and made extra for sandwiches! I have leftover potato rolls I made last night to go with dinner so will use them for the chicken sandwiches.

Crunchy Oven Baked Chicken
Marinade your chicken fillets in some lemon juice, pepper, garlic, oil, and parsley. Sit for a couple of hours, covered, in fridge.
Make fresh breadcrumbs. Add some pepper, paprika or dried mixed herbs.
Take the chicken from the marinade & roll in the seasoned crumbs, pressing on firmly to coat. Refrigerate 1/2 hour at least to set crumbs. Discard marinade.
Put onto an oven tray lined with baking paper or foil. Spray with oil. Bake at 180C for about 30 minutes, turn halfway during cooking. (Drumsticks take a bit longer, about 45 mins).
Note: Can be eaten hot or cold.
