My Serious Eats newsletter today had a slideshow about really designer grilled cheese sandwiches. It made me want to go buy some fancy cheeses and get grilling!

YUM, I love provolone. One of my favorite addictions as a kid was tuna salad on a hamburger bun half, topped with tomato and cheese and popped into the toaster over to melt the cheese. I DO like open faced sandwiches!
We had an open faced sandwich on the menu at Holiday Inns back in the 70's that was called a Monte Carlo. Get this:
4 toast points
thin sliced turkey
thin sliced ham
Cheese sauce
sliced cheddar
run that under the broiler and serve with a smile. And some chives. It was so good on a cold day.
Dh loves mustard in his sandwich...
I use margarine for it..
I've used mayo before to toast sandwiches it adds a slight tang to it.
