We seem to find quite of leftover bread in our house, especially in the cooler weather.  I would love to know how to properly prepare homemade breadcrumbs.  Seems all of my attempts fail.  I have crumbs from the outside, however the inside of the bread is still soft.  Any thoughts?

I made breadcrumbs only once, but I remember cutting the bread into squares and toasting it in the oven before I threw it into the food processor with herbs, etc..

Usually I make homemade croutons with our leftover bread. My mom always made french toast with her leftover bread. Plenty of options, I guess. Good luck!

The bread has to be dry, I agree with justzj, cut into cubes then toast in the oven.

Well of course.  That makes sense to cut them first and then toast in the oven!  By also making croutons, one would complete two tasks at once!  Thanks, you have solved my problem.

In Sweden we make something called Skorpor, it used to be made  with left over bread and left over skorpor was made into breadcrumbs.  Skorpor is  toasted and dried out bread and served with jam or cheese.

How to make breadcrumbs or Skorpor,  

Slice the bread into soldiers and if you have rolls , split them in half.   

Toasting for color ( not needed for breadcrumbs)  400F  for 7-8 minutes.

Drying is done at 160-  210  F for 2- 6 hours with the oven door ajar.

Even a few minutes in the oven then cool and toss into the coffee mill part of my stick mixer works for me. I do make croutons with leftovers or go outside and feed the birds...smile.
