Parmesan Chicken

1 envelope onion soup mix
2 cans of cream of mushroom soup
1 cup converted long grain white rice or brown rice
6 boneless, skinless chicken breast halves
1/4 cup butter cut in bits
salt and pepper to taste
1/4 cup grated parmesan cheese

Combine the onion soup mix, mushroom soup and rice. Place chicken breast in bottom of greased crock pot. Top with butter bits. Pour soup mixture over top. Sprinkle with salt and pepper and parmesan. Cover and cook on low for 8-10 hows or high for 4-6 hours.

converted rice - It is also called parboiled rice. The term "converted" is a trademark of Uncle Ben's. Long-grain rice is soaked in water or subjected to steam while it is still in the shell in order to gelatinize the grains to make it harder, as well as drive some of the vitamins into the center of the grain.

What is converted rice?
