CP Bread Pudding with Coconut & Nuts

Bread Pudding with Coconut and Nuts

1 cup sugar
1/2 cup butter, softened (1 stick)
1 t. ground cinnamon
4 eggs
3 cups white bread cubes
1/3 cup flaked coconut
1/3 cup chopped pecans

In mixing bowl, beat sugar, butter and cinnamon. Add eggs and beat well until it blends. Stir in bread, coconut and pecans. Pour into 4 to 5 quart slow cooker. Cover and cook on low for 3 to 4 hours or on high 1 1/2 to 2
hours or until knife inserted into middle comes out clean. Tip: Serve pudding warm with caramel ice cream topping if desired.
