Italian Chicken Breasts

12 ounces skinless boneless chicken breast halves
1 9 oz. pkg. frozen Italian-style green beans
1 cup fresh mushrooms -- quartered
1 small onion -- sliced 1/4" thick
1 can {14 1/2 oz. } Italian-style stewed tomatoes
1 6 oz. can Italian-style tomato paste
1 teaspoon dried Italian seasoning -- crushed
2 cloves garlic -- crushed
4 ounces fettuccine -- cooked and drained
Grated Parmesan cheese -- optional

Rinse chicken; pat dry. Cut chicken into 1-inch pieces. In a 3 1/2 or 4-quart slow cooker, place beans, mushrooms, and onion. Place chicken atop vegetables.

In a small bowl, combine undrained tomatoes, tomato paste, Italian seasoning, and garlic. Pour over chicken.

Cover; cook on LOW setting for 5 to 6 hours, or on HIGH setting for 2 1/2 to 3 hours. Serve over hot cooked fettuccine.

Miss Daisy, this sounds delicious! I'll bet a little melted cheese broiled on top,or without time, a large sprinkle of mixed Parmesan, garlic powder and basil would besuper!

Well, well, well! I was just at Safeway and they had buy one, get one free in the meat department. So I just picked up a couple of packages of chicken. Look out girls......I'm ready to crank up my crockpot & start cooking!

Yum! Speaking of Mexican chicken....(How did we get here...we started with Italian chicken breasts....!!)
Oh yeah,Mexican chicken.I always keep a can or jar or two of salsa verde.Pour that over your chicken pieces of choice, or whole chicken and CP cook a couple of hours. Green chiles layered in between or thrown in at the last and you'll lick the pot clean. For last minute company throw in a can of drained white or pinto or kidney...whatever..beans to make it a full- bodied meal without going bankrupt.(Men LOVE it!)
Don't forget to cover and zap a few tortillas for the table.Then serve with your favorite fixings! Ole'!
