Today is the second time I have made this. Today I made it for a Halloween party and it was the only dish to go.....completely. I also have been asked by several for the recipe.

Finally got around to making this tonight. I had a hard time finding pinto beans, so I took Daisy's advice and just used white kidney beans in their place. The soup was delicious! I let my kids try it while simmering (I did stove top in the stockpot) so I knew if I was going to have to make something else to feed them. DD didn't like it, but I knew she wouldn't..hates tomatoes. DS, I couldn't keep him out of the pot! I caught him stealing spoonfuls 3 different times the little bugger! lol DH gave it great reviews too.I am looking forward to leftovers for lunch tomorrow ;)

Thanks for the recipe Cari.

(I did omit the olives, I can't stand them. But I did use all the garnishes except the jalapenos...yummy)

Yep, I could not find those pinto beans anywhere. I went to 4 different grocery stores! Maybe they don't sell them up here in my part of the country. I am going to have to ask my Mom if they sell them where she lives, cause I will be making this again. It does make alot!! I am going to be freezing some in little individual packs so it's an easy lunch.

That's weird that they wouldn't have pinto beans up there. Hmmm.

I was planning on the next time I make it I am going to half it for sure, because it does make alot! I guess I would say it was inbetween, wasn't really juicy and wasn't to thick...if that makes sense. I feel like I am describing the 3 bears story ..lol It was just right ;)

Edited to say: DH said that it looked like a runny chili if that helps. The chili he makes is very thick.

Made this last night....I was going to just do half because I only had 1 pound of ground beef, but I went ahead and used the regular amount of all ingredients except the beef and it worked out just fine.

Glad you liked it.

You found it spicy??? Really?? I am so not a spicy person...in fact BBQ chips are rough on me. I did not think it was spicy at all. Hmmmmmm.
