CP Beef Goulash

3/4 lb beef, cubed
1-1/2 T oil
1/2 c mushrooms, sliced
1/4 c chopped onion
1 can tomato soup
1/8 c water
1/2 bay leaf
1/2 t salt
dash of pepper
1/2 t paprika
1/4 pint sour cream

Heat oil in skillet and brown meat on all sides. Place meat into slow cooker and sauté mushrooms and onions in skillet for a few minutes. Remove pan from heat. Add all remaining ingredients except sour cream to onions and stir to blend. Pour over meat and stir together. Cover and cook 7 to 9 hours. (don't peek). At serving time, stir a few tablespoons of cooking juices with sour cream, then stir the cream mixture into the meat. Check seasoning for salt. Serve with hot noodles or rice.
