Tex-Mex Stew

2 pounds stew meat
1 (28 ounce) can whole tomatoes, cut into smaller pieces
1 cup salsa, your choice
1 bag frozen pearl onions, or one whole large onion, chopped
1 teaspoon chili powder
1 (15 ounce) can black beans, rinsed and drained
1 (11 ounce) can corn with red and green peppers
1 packet taco seasoning mix (low sodium variety works well too)

Put the meat, onions, salsa and can of tomatoes (with juice) into the
crockpot. Sprinkle with chili powder. Cook on HIGH for 4 to 5 hours, or
on LOW for 9 to 11 hours. One-half hour before serving, add black
beans, corn and taco seasoning. Cook on HIGH for 15 to 30 minutes,
until stew thickens.

I made this yesterday for dinner. It came out great! DH who is not a huge soup and or stew fan thought it was wonderful! I did use fresh pearl onions in place of frozen ones.

I will be making this again but might add some cumin along with the chili powder mostly because we like it - not that it needs any additional flavor.

Daisy -

I gave this recipe to my co-worker - she and her DH loved it too - so much so I decided to use it as the "Recipe of the Month" for our up coming residents newsletter!

Too funny, Sandy... I was just thinking that yesterday but it's been so busy up in the Conversation Corner that I was going to wait until it got slow... what do you think?

I am bumping this one up! I know we have a lot of Mexican food lovers on this board and for any of you who have not tried this yet - give it a whirl - it is realy good and is a "cold weather" type of comfort food. Don't want it to get lost because it is worth a try!

I agree Sandy, I made this tonight. It was yummy! I did substitute the stewing meat for cooked ground beef, just because I don't care for stew meat but that was my only change. I used fresh onions as well.
