Crock Pot Peking Pork Chops

6 boneless pork top loin chops (1 inch) thick cut
1/4 cup brown sugar
1 teaspoon ground ginger
1/2 cup soy sauce -- or teryaki sauce
1/4 cup ketchup
1 clove garlic
salt and pepper -- to taste

Trim excess fat from pork chops and place in slow cooker. Mix brown sugar, ginger, soy sauce, ketchup, garlic, salt and pepper in small bowl and pour over meat. Cover, turn to low and cook 4 to 6 hours, or until tender. Season with salt and pepper, if needed.

I have this all ready sitting in the fridge "marinating" over night and will turn it on in the morning . . . . I did a little taste test and it is TO DIE FOR delicious! I'm just hoping it doesn't over cook while I'm at work. I plan on making some white rice to go along with it. And maybe some mixed veggies . . . . ooooooo maybe I'll make a fired rice . . . hummmmmmmmmmm. I guess I could call mom and see if they want to have dinner with us tomorrow. She would LOVE this as much as me.

Well it's only 430 and I'm not off work yet but I will update as soon as dinner is over.

Well, it was good! Could have been great, but it says cook 4-6 hours. I am not home that soon, so it cooked for ummmmm 11 hours (leave at 7 am home at 6pm) yeah 11 hours. But it wasn't burnt or anything, just too done, KWIM? When I make it again (and yes I will make it again) I will be modifing only in one way - less Soy Sauce or try to find one low in salt (if they even make one) with 1/4 soy sauce, it was really salty, I've drank 3 bottles of water since dinner, I am about to float away. But over all it was delish. Mom and dad really liked it as well! I would recomended it, with that one modification!
