OMG...BBQ Pulled Pork

INGREDIENTS:

4lb pork roast
2 onions, sliced, divided
1 onion, chopped
5 or 6 whole cloves of garlic
2 cups of water
16oz bottle of your favorite bbq sauce
salt and pepper

PREPARATION:

Place one sliced onion at the bottom of Crock Pot
Stud pork roast w/ cloves and season with salt and pepper
Place roast in slow cooker on top of the sliced onion. Cover with the second sliced onion and add enough water to fill CP two thirds of the way.
Cover and cook on low 8-12 hours.
Romove roast.
Remove and discard cloves, bone and fat as well as any water, onions and grease remaining in pot.
Wehn pork roast is cool enough to handle, use a fork or your fingers to pull it apart until the entire roast is shredded.
Return the pulled pork to the CP. Mix in the chopped onion and BBQ sauce and cover. Heat on high for 1-3 hours or until the onions are soft.

I posted the original recipe, but I did alot of changes. I didn't have 8-12 hours, more like 5, so I cooked it on high. Also it was a 3 lb Pork Shoulder Roast that I used. I only used one onion sliced and cooked at the beginning...I didn't add the chopped onion w/ the BBQ sauce. I used the Kraft hickory smoke BBQ sauce...yum! Also at the end, I cooked it on low for almost an hour, it was starting to get hard around the edges, I think high is way too much. Oh and we made sandwiches...I forgot to put that part in there.

This was so darn good, I couldn't get enough of it! I was licking the spoon after I put the leftovers away.....might have something to do w/ being preggo! It was so tender, my 20 month old was eating it! I really recommend it!

I especially like the part where you reduce the onion.

Yeah...I just thought 3 onions is a bit much!!

Thanks! Things are going well, I'm still going in twice a week for nst's and ultrasounds. But that's okay, it gives me a peice of mind that he is okay. His heartrate seemed a little on the low side Fri, but the dr's didn't think it was a problem, so I'm trying not to stress about it! I always find something to worry about!

Seems the harder we try not to stress, the more we do stress lol. Hang in there, glad to hear things are going well. Always finding something to worry about, that's a Mom/Woman thing! ;)
