Provencale Chicken Supper


4 (6 oz.) chicken breast halves
2 tsp. dried basil
1/4 tsp. salt
1/4 tsp. black pepper
1 cup diced yellow bell pepper
1 (16 oz.) can navy beans, rinsed and drained
1 (14 1/2 oz.) can pasta-style chunky tomatoes, undrained
Basil leaves (optional)


Place chicken in a 4 1/2-quart electric slow cooker; sprinkle with basil, 1/8 tsp. salt and 1/8 tsp. black pepper.
Combine remaining 1/8 tsp. salt, remaining 1/8 tsp. black pepper, bell pepper, beans, and tomatoes in a bowl; stir well. Spoon over chicken. Cover and cook on high for 1 hour. Reduce to low setting and cook for 5 hours. Spoon bean mixture into each of 4 shallow bowls; top each with 1 chicken breast half. Garnish with basil leaves, if desired. Yield: 4 servings
