Crockpot Morning Casserole
1 bag (32 oz) frozen hash browns
1 lb. bacon diced, cooked & drained or 1 lb. cubed, cooked ham
1 onion diced
1 green pepper diced
1 1/2 C. shredded Cheddar cheese or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 t. salt
1 t. pepper
Before you go to bed, place a layer of frozen hash browns on the bottom of the crock pot followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

Put this together last night at 1:00 am ... I used hash browns with diced onion and green pepper in them, used a pound of ham (knew I would not want to fry bacon that late- would have ate most of it anyway!).. a whole onion and no green pepper, 1/2 pound of cheese , the eggs and milk- I added almost a teaspoon of salt, and was leary on that much pepper so only about 1/2 teaspoon.. (You can always add- but can't take away once it is there!).. Turned it on low and went to bed..
I woke up at 6:05 and turned it off- browning on the edges- but smelled way yummy!
It is very good -and sure beats cooking in the morning =)
If you make it remember to not cook as long as it says though!
