Beans and Rice with Cummin

- sliced jalapeno peppers (optional) .
- 3 c sliced onions .
- 3-4 sliced jalapenos .
- 4 bay leaves .
- 6-8 garlic cloves .
- lemon wedges (optional) .
- 4 1/2 c water .
- 2 c instant brown rice .
- 1 tbsp ground cumin .
- 2 tsps salt .
- cilantro (optional) .
- 1 lb dried black beans, soaked rinsed & drained .
- 1/2 tsp pepper
Directions
- Step #1 Combine beans, garlic, water, cumin, onion, jalapenos, bay leaves, salt & pepper in slow cooker (aka crockpot).
- Step #2 Cover up; cook on HIGH for 4-5 hrs.
- Step #3 Remove & discard bay leaves.
- Step #4 Stir in instant rice; cover & cook 15 more mins.
- Step #5 Garnish soup with cilantro, extra jalapenos & lemon wedges, if desired.
