CP Chicken with Red Onion Salsa
4 chicken breast halves, rinsed and patted dry
2 T. Mexican seasoning (McCormick)
2 cans (10 oz. each) Mexican diced tomatoes, (Ro-Tel)
1 can tomato paste (6 oz)
2 medium red onions, peeled and finely diced
Season both sides of chicken breasts with Mexican seasoning and set aside. In medium bowl, stir together the diced tomatoes, tomato paste and onions. Pour half of salsa mixture in the bottom of a 5 quart slow cooker. Add chicken and top with remaining salsa mixture. Cover and cook on low setting for 4 to 6 hours. Serves 4
