Beef Fajitas
1 1/2 lbs of beef flank steak
1 cup of chopped onion
1 green sweet pepper, cut into 1/2 inh pieces
1 or 2 fresh jalapeno chile peppers chopped
1 tbls snipped fresh cilantro
2 cloves garlic, minced
1 tsp chili powerd
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp salt
1 14 1/2 ounce can stewed tomatoes, undrained
whole wheat flour tortillas
1 tbls lime juice
shredded cheddar cheese
sour cream
salsa
1. trim fat from meat. Cut meant into 6 pieces. In slow cooker combine onion, sweet pepper, Jalapeno peppers, cilantro, garlic, chili powder, cumin, coriander & salt.
Top with meat; add the undrainded tomatoes
2. cover and cook on low heat setting for 8-10hrs or on high for 4-5 hrs
3. To Heat tortillas, wrap them in foil and heat in a 350 oven for 10-15 min or until soft. Remove meat form cooker. Use Two forks to shred meat. Return Meat to cooker, and stir in Lime Juice.
4. To serve Fajitas, use a slotted spoon to fill the warmed tortillas with the beef mixture. If desired add shredded cheese, sour cream and salsa... roll up tortillas and enjoy.
