Fall Harvest Chowder

Fall Harvest Chowder

1/2 lb ground beef, browned and drained
1/2 cup chopped onion*
4 cups water
1 cup diced carrots
1 cup diced celery
1 cup potatoes, peeled and cubed
1 (28 oz) can diced tomatoes
1 (8 oz) can tomato puree
1 tsp salt
1/4 tsp pepper
1/4 tsp crushed bay leaves
1 1/2 tsp Italian seasoning

Combine all ingredients in greased 4 1/2 to 6-quart slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours. For a thicker soup, cook on low for 8-10 hours. 8-10 servings

*1/4 cup dried minced onion can be substituted
