Creole Veggie Jumble


This spicy rice and vegetable dish is colorful and delicious



  • 1 Tbsp. oil

  • 1 cup chopped onion

  • 3/4 cup chopped bell pepper

  • 3/4 cup chopped celery

  • 2 garlic cloves; minced

  • 1 cup long-grain rice; uncooked

  • 14 oz. vegetable broth

  • 1 cup frozen whole kernel corn

  • 2 Tbsp. Worcestershire sauce

  • 2 Tbsp. Creole seasoning

  • 1/8 tsp. ground red pepper

  • 15 oz. can black-eyed peas; rinsed, drained

  • 14 1/2 oz. stewed tomatoes; undrained

  • 3-4 drops hot sauce; optional
