Black Beans with Garlic, Cumin & Cilantro

Recipe Courtesey of Gourmet

1 16 - 19 oz can Black Beans

2 cloves Garlic

1 teaspoon Cumin

2 Tablespoons Olive Oil

1 medium Tomatoe - Chopped

Rince black beans and drain. Chop garlic. In anonstick skillet cook garlic and cumin in oil over moderate heat, stirring until fragrant. Add black beans, tomatoe and salt to taste - cook stirring until beans are heated through. Stir in cilantro and serve.

Here is another one I am bumping up! Also comes from the South Beach Diet recipes - This one is great as a side dish in place of baked beans which tend to have a lot of sugar in the sauce.

P.S. - I know some of you do not like cilantro - just leave it out or switch to basil and or oregano for an italian twist. You can also do the same thing with white or kidney beans.
