Cheesy Potatoes

4 large potatoes, peeled and sliced

1 small onion, finely chopped

1 1/2 cups shredded Cheddar cheese

1 teaspoon margarine

salt and pepper to taste



Directions

1 Layer the potatoes, onion, cheese, salt and pepper into

a microwave safe casserole dish. Once finished layering,

place 1 teaspoon of margarine on the top of the uppermost

layer. Cover and cook in the microwave oven on HIGH for 10 minutes.

2 Remove the dish from the microwave and stir before

cooking for another 10 minutes or until done. Stir well and serve.

Sounds yummy!!!

Oh Boy!!!I thought I was the only one in the world who loved cheesy potatoes. My favorite way to do it-takes a little more time, but worth it- is to make your favorite macaroni and cheeese sauce and pour it over your potatoes. Sliced, chunked, whatever. If they're raw, bake in the oven until the spuds are done and the top is bubbly.It also gives you time to put the wash in the dryer, set the table, sweep the floor, put on some fresh makeup, go to the bathroom, wipe your kids runny noses, etc.

Sorry to say but DH and I did not care for these. I tried to cut the potatoes all the same size but some of them were cooked completely and some were not. And they were not very flavorful. Now maybe I used too many potatoes and not enough cheese and onions.

I would do a couple layers of everything too.... and oh yeah... cheese is a good thing!

Made these last night, have to admit I was a skeptic. I don't usually like the microwave for cooking. I only use it to reheat or warm up....but these were good! The only problem I had was it didn't make enough..lol My son and DH wanted seconds but there were none. I will double the recipe next time ;)
