I couldn't resist posting this since Asparagus has been a hot-topic lately...
Asparagus Stir-Fry
Prep/Cook: 20 min
1 cup Swanson Chicken Broth OR Natural Goodness Chicken Broth
1 tbsp. cornstarch
1 tbsp. low-sodium soy sauce
1 tbsp. vegetable oil
1 lb. asparagus, cut into 2" diagonal pieces
2 tsp. grated ginger root*
2 cloves garlic, minced
Toasted sesame seeds (optional)
MIX broth, cornstarch and soy sauce.
HEAT oil in skillet. Add asparagus, ginger root and garlic and stir-fry until almost tender-crisp. Add broth mixture
and heat to a boil. Cook and stir until mixture boils and thickens.
SPRINKLE with sesame seeds if desired.
Makes 4 servings
*You can substitute 1/8 tsp. ground ginger for fresh ginger root.

I do almost this exact recipe except with scallops added.
By the way, I didn't buy any asparagus this week!

Why wouldn't this be yummy with shrimp, instead?
(bought some asparagus at the market last night, can't you tell?)

Actually I was just going to post a Sesame Shrimp & Asparagus Stir-fry recipe - but you can just add the shrimp and sesame seeds to this one!
