Double Stuffed Potatoes (courtesy of Rachael Ray)


2 large Russet potatoes, cleaned and pricked with a fork several times each <?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />


Drizzle olive oil or vegetable oil


2 slices center cut bacon, chopped into 1/2-inch pieces


2 scallions, chopped


1/4 cup sour cream


1 cup shredded cheddar cheese


Salt and coarse black pepper

Glad you added the part about the amount of cheese being "to taste" because I know that our taste is for more than 1 cup LOL.
