Can not remember where I got this one from -

Red, White & Blue Slaw

12 slices bacon (regular or turkey)

6 cups shredded cabbage (I use the already shredded bag kind)

1 cup cole slaw dressing

1/2 cup blue cheese, crumbled

1 cup cherry tomatoes, halved

Cook bacon till browned and crispy - crumble and set aside

In large bowl combine cabbage dressing and bacon - mix well - stop with tomatoes and blue cheese. Refrigerate and serve chilled.

NOTE: To keep this low carb use the dressing found in the creamy cole slaw recipe which replaces the sugar with splenda.

I made this for our annual family "pig roast" we had over the labor day weekend.

It was a HUGE success! Not even one spoonful was leftover and there were lots and lots of side dishes to choose from. Everyone loved it and asked for the recipe. I did use a sugar free cole slaw dressing which kept the carb count nice and low.

There is still grill weather left - anyone planning a cook out should give this a try. It is a real "keeper" for me.
